Grilled Shrimp Kabobs with VEGGIES 

Hey y’all!  I’m Lynn from Back to the South!  I’m excited to share one of my go-to recipes when I’m short on time, but tastes so good: Grilled Shrimp and Kabobs with vegies!

Last week, one of my readers asked me if I had a quick and easy recipe.  She and her family were in a recipe rut and were tired of eating the same ‘ole things!  

I’m a firm believer in quick and easy recipes.  After a hard day of work, who feels like being in the kitchen for hours?  I know I don’t!  I save the more detailed and complicated cooking and recipe creations for the weekend when I have more time.

I love to grill.  I don’t care if it’s December or June, you’ll catch me grilling no matter the season or month.  My husband thinks I’m crazy for grilling year-round, but when it’s time for a meal, he has no complaints!  

I don’t know if it’s because I’m from Texas and we grilled all the time growing up (my parents still do by the way) or if it’s my love for being outside and having fun, but no matter what, grilling is my go to, especially when I don’t want to be in the kitchen.

Grilled Shrimp Kabobs with VEGGIES Recipe

It’s a very rare day when we have fried food. Grilling gives food such a great flavor and I especially love it because it’s so quick.  Just season your meat and vegetables and yum, it’s time to eat!  No messy kitchen, there aren’t lots of dishes to wash and it doesn’t require a lot of prep for the simple meals.

When I grill, I marinate whatever I’m grilling the night before so that it’s good and seasoned. These shrimp kabobs are super easy, quick,  and very yummy!

I marinate whatever I’m cooking the night before.  For shrimp kabobs, I make a simple marinade that’s white wine, lemon juice, parsley, kosher salt, and pepper; it really brings out the flavor of the shrimp.  I cut up the vegetables into chunks and season them with salt and pepper.  The prep work takes 30 minutes max.

Another great thing about kabobs is that your kids can help too!  When my nephews are in town, I make sure we have kabobs one night so they can help me cook.  They love putting the meat and veggies on the skewers.  We have such a good time and it’s a way for us to spend some special time together and learn about healthy eating!

The next day when myself or my husband gets home, the shrimp and veggies are placed on the skewers, the grill gets fired up and we wait until they are ready.  We like our veggies al dente (meaning they are firm, but not crunchy) and shrimp cooks quickly so after 15-20 minutes, they kabobs are ready and it’s time to eat!

Because shrimp cooks so quickly, if you prefer your veggies more done, it’s best to put the shrimp on one skewer and the veggies on another so the shrimp don’t overcook.  If you’ve never grilled shrimp, there is a fine line between done and mushy.  When shrimp is overcooked on the grill, they become mushy; it’s not good, take my word for it!

How to Make Grilled Shrimp and Veggies Kabobs

Ingredients:

  • Shrimp
  • White wine
  • Olive oil
  • Garlic
  • Zucchini, sliced
  • Squash, sliced
  • Cherry tomatoes
  • Pepper, cut into chunks
  • Green pepper, cut into chunks
  • Salt
  • Pepper

Directions:

  1. Pour olive oil onto the shrimp.
  2. For the shrimp marinade, pour the white wine into a plastic resealable bag.  Add the garlic.
  3. Place the shrimp into the bag, shake so the shrimp is covered with the marinade and place in the refrigerator for at least 1 hour.
  4. While the shrimp is marinating, cut up the vegetables into chunks.
  5. Sprinkle the vegetables with salt and pepper to taste.  Place the vegetables into a plastic resealable bag.  Shake the bag so all of the vegetables are covered with seasoning.  Place into the refrigerator until the shrimp is ready.
  6. Once your shrimp have marinated and are ready, fire up the grill!
  7. Slide the shrimp and vegetables onto the skewers and lay them on the ventilated pan.
  8. When your grill is ready, place the kabobs while on the pan onto the grill.
  9. Cook for 15-20 minutes.
  10. Enjoy!

Y’all, it doesn’t matter how you add the meat and veggies on the skewers.  As you can see from my picture, I have more veggies than shrimp; that’s because I’m a veggie gal.

If you prefer more shrimp then, by all means, add more shrimp.  When I grill my kabobs, I like to place them on a ventilated tray so they are not in direct heat; you don’t want them to cook too fast.  Yes, it really is that easy, that quick, and that good!

  • 1 zucchini sliced
  • 1 squash sliced

  • 1 red pepper cut into chunks
  • 1 green pepper cut into chunks
  • Salt
  • Pepper

Instructions
 

  • Pour olive oil onto the shrimp.
  • For the shrimp marinade, pour the white wine into a plastic resealable bag.  Add the garlic.
  • Place the shrimp into the bag, shake so the shrimp is covered with the marinade and place in the refrigerator for at least 1 hour.
  • While the shrimp is marinating, cut up the vegetables into chunks.
  • Sprinkle the vegetables with salt and pepper to taste.  Place the vegetables into a plastic resealable bag.  Shake the bag so all of the vegetables are covered with seasoning.  Place into the refrigerator until the shrimp is ready.
  • Once your shrimp have marinated and are ready, fire up the grill!
  • Slide the shrimp and vegetables onto the skewers and lay on the ventilated pan.
  • When your grill is ready, place the kabobs while on the pan onto the grill.
  • Cook for 15-20 minutes.
  • Enjoy!
