Cake 2 ripe bananas 2/3 cup sugar 2 eggs 1 tbsp milk 1/3 cup Vegetable oil 1/2 tsp baking Soda 2 tsp baking powder 1 and 3/4 cup AP flour 1 tsp Vanilla extract 1 pint strawberries sliced and tossed in flour Vanilla Glaze 1 cup powdered sugar 1 vanilla pod beans scraped out {or 2 tsp vanilla extract} 2-3 tbsp milk
Cake Preheat oven to 350
Grease mini loaf pan or full loaf pan
In a mixer combine the vegetable oil, mashed bananas, vanilla, and sugar till mixed and fluffy
Add the eggs one at a time letting each combine
Add the milk
Then add booth the baking soda and powder
Slowly add the flour and mix till all is combined and a nice batter forms
Fold in the strawberries
Pour batter into prepared pans
Bake 45-50 min {35-40 for a gooey middle}
Let cool in the pan 30 min
Then carefully turn out and let cool completely
Vanilla Glaze Mix all the glaze ingredients
Let it set for 15-20 minutes and drizzle over cooled bread
Serve with extra strawberries
