Summer Apple Salad

  • 3 Fuji apples diced {any apple will work}
  • 1 tsp lemon juice
  • 2 oz of raisins {that's 2 little snack boxes}
  • 1/2 cup pecans chopped
  • 2/3 cup buttermilk
  • 1 cup light mayo
  • 1 tsp sugar
  • Romaine lettuce {optional}


  • place apples and raisins in a mixing bowl
  • add the lemon juice to keep apples from browning
  • in a smaller bowl whisk the mayo and buttermilk until smooth and creamy
  • mix the sugar into the creamy mixture
  • pour over the apples and toss to coat
  • gently fold in the pecans
  • place in fridge for minimum of 30 min
  • Enjoy!
