Ingredients

  • 2 cup cooked Chickpeas
  • 2 large Red pepper
  • 1 Garlic clove
  • 3 tbsp Tahini sesame seeds paste
  • 1 tsp Paprika
  • 2 tbsp Olive oil
  • 1/4 tsp pepper
  • 1/2 tsp Salt
  • 1 tbsp Lemon juice

Instructions

  • Preheat the oven to 400 degrees F. or 200 degrees C.
  • Cut the bell peppers lengthwise and place them on a baking sheet arranged on a single layer.
  • Pour 2 tbsp of olive oil and broil the peppers until the skin is charred and blistered but not ash white, turning occasionally, for 30-40.
  • Once cooked, let them cool and peel off the skin. Set aside a small portion to serve on top later.
  • In a blender or food processor, combine cooked chickpeas, peeled roasted bell peppers, tahini, salt, paprika, pepper, lemon juice, and chopped garlic.
  • Blend until achieving the desired texture (about two minutes).
  • Serve on a plate alongside some pieces of separately roasted bell peppers, olives, additional chickpeas, and paprika, add a drizzle of olive oil or your desired toppings.
  • Accompany with toast, crackers, or pita bread.

Notes

*Place hummus on a plate or in a bowl and spread it using the back of a spoon.
Top with the reserved red pepper, drizzle with olive oil, and garnish with fresh thyme and/or paprika if you desire.
