Equipment

  • Blender or hand/immersion blender

Ingredients

  • 1 pound {500gr.} Frozen Green Peas
  • ¼ pound {100gr.} sliced bacon.
  • 1 medium onion
  • 2 garlic cloves – smashed
  • 1 stick of celery
  • 2 medium potatoes
  • ½ liter of vegetable stock.
  • Salt and black pepper to taste.
  • Heavy cream {optional}

Instructions

  • Cut vegetables into small pieces.
  • In a large pot fry the bacon over medium-high heat until crunchy. Alternatively, you can try baking it in the oven until it’s crispy.
  • Add in onion, celery, potatoes, salt, and pepper and mix them letting all vegetables to golden.
  • Add in the green peas and mix and stir in the stock.
  • Cook over medium heat until green peas are soft.
  • Let it cool and blend it to create a creamy texture. You can use a blender or an immersion blender.
  • To serve, heat it a little bit, add some garnish like parmesan cheese, heavy cream, and croutons
  • Enjoy!

Notes

Green Peas have such a great flavor on their own, they really don’t need much else, however, you can add a tablespoon of heavy cream to your soup to add some extra flavor and texture and also add some crushed fried bacon on top!
