Ingredients

  • 3 Bananas cut in 2 or 4 – small and ripe yet firm.
  • 2 Eggs
  • 1 tbsp light cream of half & half.
  • 2 Cups crumb bread
  • 1 Cup all-purpose flour
  • 1/2 Sugar
  • 1-2 tbsp Cinnamon powder

Instructions

  • In a deep-fry machine or heavy-bottom saucepan, heat the oil to 350ºF (180ºC).
  • Peel off the bananas, remove the stringy parts that cling to the peeled fruit, and cut crosswise in half.
  • In a small bowl beat the eggs with the light cream.
  • On a plate mix the bread crumb and flour.
  • Soak the banana pieces in the beaten eggs to coat them lightly. Hold them over the liquid to let any excess fall back into the bowl.
  • Coat each banana half through the dry ingredients to get an even coating on it, turn it over, and press it into the breading to coat. Shake to remove excess flour.
  • Repeat eggs and bread crumbs once more.
  • Lay them on a piece of waxed paper or a plate.
  • In another small bowl mix sugar and cinnamon.
  • Deep-fry in hot oil some banana pieces at a time until golden brown and crispy. Turn them and fry until equally brown on every side, about 1-2 minutes.
  • Immediately place the fried bananas in the sugar-cinnamon mixture and coat them well with it and then place them on a container or plate.
  • Serve hot and add a scoop of ice cream if desired.
