Ingredients

  • 8 big Tomatoes
  • 4 fresh mozzarella balls chopped {small cubes}
  • ½ cup of chopped black olives
  • Fresh basil chopped {extra for garnish if you want}
  • ½ tsp dried Oregano
  • ½ tsp dried basil
  • 4 tbsp extra virgin Oil
  • 1 tbsp balsamic vinegar
  • salt and pepper {optional} to taste
  • Lettuce leaves {as many as you like}

Instructions

  • In a medium bowl mix all the ingredients and mix well. Set in the fridge for 20 or 30 minutes.
  • Wash your tomatoes and using a knife remove the all the pith, seeds and jelly. Also with a teaspoon, you can remove any remains. Leave it empty.
  • Fill each tomato with the mozzarella mixture.
  • In a dish make a bed of lettuce and place all your caprese stuffed tomatoes. Decorate with fresh basil {optional}.
  • Serve and enjoy!
