Caprese Stuffed Tomatoes
Are you a Caprese lover? I’m crazy about anything Caprese so I’m always looking for different ways to have it! This Caprese stuffed tomatoes recipe is a variation of the traditional Caprese salad and I have to tell you is delicious. I could have about half a dozen of these in one sitting!
How to make Caprese Stuffed Tomatoes
If you are looking for an easy, delicious and super healthy option for dinner, side dish, or even an appetizer, this recipe is your perfect option!
Either if it’s a lazy Sunday, a get-together, or any occasion you can never be wrong with Caprese. I love this type of salad because you don’t need to spend much time in the kitchen. It’s like my Pinto beans salad. In a few minutes, you have a delicious and healthy salad that you can have alone or as a side dish. I usually have them at dinner alone! Yummm.
What is exactly Caprese?
Caprese or Caprese Salad (in Italian Insalata Caprese) is a very famous and traditional Italian entrée or Antipasto. A Caprese salad is made from fresh tomato, buffalo mozzarella, basil, olive oil, salt and pepper. Doesn’t it sound delicious! Some places have variations, for example, some places add black olives like I’m doing in this recipe.
To make these delicious Caprese Stuffed Tomatoes you…
In a medium bowl mix all the ingredients and mix well. Set in the fridge for 20 or 30 minutes.
Wash your tomatoes and using a knife remove all the pith, seeds and jelly. Also with a teaspoon, you can remove any remains. Leave it empty.
Fill each tomato with the mozzarella mixture.
In a dish make a bed of lettuce and place all your Caprese stuffed tomatoes. Decorate with fresh basil {optional}.
Serve and enjoy!

Ingredients
- 8 big Tomatoes
- 4 fresh mozzarella balls chopped {small cubes}
- ½ cup of chopped black olives
- Fresh basil chopped {extra for garnish if you want}
- ½ tsp dried Oregano
- ½ tsp dried basil
- 4 tbsp extra virgin Oil
- 1 tbsp balsamic vinegar
- salt and pepper {optional} to taste
- Lettuce leaves {as many as you like}
