Equipment

Ingredients

  • 1 Cup of all-purpose flour
  • 1 stick of unsalted butter at room temperature
  • 1/2 Cup of brown sugar
  • 1/2 Cup of White Sugar
  • 1 Large egg
  • 1 1/2 Cups of oatmeal flakes
  • 1/2 Cup of chopped walnuts
  • 2 tsp of Vanilla extract
  • 1/2 tsp of baking soda.
  • Pinch of Salt

Instructions

  • Preheat the oven to 350F/180C.
  • In a stand mixer with the paddle attachment beat the butter until soft and fluffy.
  • Stir in white and brown sugar gradually so they incorporate better and beat until well combined.
  • Then add the vanilla and egg.
  • In a bowl mix the flour, baking soda, and salt.
  • Add the flour mixture to the butter mixture beating until is well incorporated.
  • Mix in the oats in two parts so they’re easier to incorporate.
  • Finally, add the walnuts and mix well. I like using a rubber spatula for this part.
  • Let the dough chill in the fridge for at least 30 minutes.
  • In a baking tray lined with parchment paper or aluminum foil greased and place small balls of dough with enough space in between for them to grow.
  • Bake for 8-12 minutes or until golden brown espeecially on the edges.
  • Take them from the oven, and let them cool in a wire rack.
