Lime Streusel Muffins. A Delicious Recipe

Lime Streusel Muffins, tender muffins topped with sweet and crunchy streusel topping, bursting with lime flavor!

Delicious Lime Streusel Muffins

I love creating recipes with citrus. Especially limes, they just add such a unique flavor to dishes. But, my favorite way of cooking with them is baking! I’ve been known to dabble in quite a few lime desserts in the past; Individual Frozen Key Lime Pies, Lemon Lime Angel Food Cupcakes and Key Lime Raspberry Sandwich Cookies to name a few.

BUT, I have never created a lime treat that is geared more toward breakfast. Lo and behold, these ah-mazing Lime Streusel Muffins!

I know, it might sound a bit odd, making lime a primary flavor in muffins but IT. JUST. WORKS. You have to try them!

How to make Lime Streusel Muffins

INGREDIENTS  

LIME MUFFINS

  • Unsalted butter
  • Granulated sugar
  • Large egg
  • Vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt
  • Half and half
  • Lime juice freshly squeezed
  • Zest of one lime

STREUSEL TOPPING

  • 1/2 Cup granulated sugar
  • 1/3 Cup all-purpose flour
  • 1/4 Cup cold unsalted butter cut into small cubes

INSTRUCTIONS 

  1. Preheat the oven to 350ºF 180ºC/Gas 4/fan 160ºC.
  2. Line a muffin tin with paper liners or spray with nonstick cooking spray.
  3. In a large bowl of a stand mixer, cream the butter and sugar from the muffin ingredients.
  4. Beat in the egg and the teaspoon of vanilla extract, and mix well.
  5. In a separate medium bowl, add and whisk the 2 1/3 Cup flour, baking powder and salt, and stir to combine.
  6. Add the dry ingredients to the wet ingredients alternatively with the half and half.
  7. Last, add in the lime juice and lime zest until fully incorporated, but do not over-mix.
  8. Pour muffin batter evenly (2/3 full) into a 12-greased or paper-lined muffin pan.
  9. Combine the streusel topping ingredients
  10. Cut in the butter until crumbly.
  11. Top the muffins evenly with topping.
  12. Bake for 25-30 minutes, until golden brown, let cool for 5 minutes before serving on a wire rack.
  13. Serve and enjoy!
