Frozen Malibu Coconut Limeade
It’s already summer and the weather seem to start making us crave fresh and iced beverages. I recently shared my Fresh Coconut Limeade which has a chunky texture from the fresh coconut. Today I’m sharing a variation of it, A delicious and refreshing Frozen Malibu Coconut Limeade. This recipe adds a touch of coconut rum but you can skip this so your kids can have them too.
Frozen Malibu Coconut Limeade
This recipe couldn’t be simpler. I made this recipe but since my girl and my brother love it, I made two batches one with and one without. For the alcoholic version, I left the Malibu out until I got the consistency I wanted and serve them a cup and then added the Malibu. You can play around with it and adapt it to your tastes. I am not a fan of this hot summer weather that we are already having, but let’s face it, it’s perfect to stay cool and have this rink, right? Hence, this post. I think I found my new favorite drink: Frozen Coconut Limeade!
This drink tastes like summer in a glass. Between the sweet coconut, lime pie, and the slushy consistency, it will have you feeling like you should be sitting on a beach right now. BUT if there are no beach visits in your immediate future, at least you can go to a pool abd have this frosty drink that will keep you cool during the warmer months.
We enjoyed it so much. It’s so absolutely delicious and refreshing… I’m becoming a bit addicted; I’ve made it several times with and without Malibu and I can’t get enough of it!
I’m not much of an alcohol drinker but coconut rum is really good as an addition to some drinks. Brings scent and a delicious flavor without getting anybody drunk LOL. Of course, I’m talking about really small quantities LOL!

Ingredients:
- Coconut milk {Shake the can well first}
- Lime juice (about 3-4 limes)
- Sugar (Adjust to taste)
- Malibu liquor {or any coconut rum}
- Crushed or small ice cubes
- Cherries, lime slices and coconut pieces as garnish
Directions:
In a blender mix all ingredients (coconut milk, lime juice, sugar, malibu*, and crushed ice) together until you get the desired consistency.
I prefer smooth like it creamier but if you can get it more with crunchier effect by blending less time.
Serve and enjoy!

- 3 tbsp sugar Adjust to taste
- 1/3 cup of Malibu {or any coconut rum}
- 3-4 cups crushed or small ice cubes
- Cherries lime slices and coconut pieces as garnish
Instructions
- In a blender mix all ingredients together until you get the desired consistency.
- I prefer smooth like it creamier but if you can get it more with crunchier effect by blending less time.
- Serve and Enjoy!
