Itโ€™s almost summer and the weather seems to start making us crave fresh and iced beverages. I recently shared my Fresh Coconut Limeade which has a chunky texture from the fresh coconut.

Frozen Coconut Limeade Drink Recipe with Malibu

Today Iโ€™m sharing a variation of it, A delicious and refreshing Frozen Malibu Coconut Limeade. This recipe adds a touch of coconut rum but you can skip this so your kids can have them too.

In my home country (Venezuela), we call lit Limonada de Coco and it’s also known as a Colombian drink. Let me tell you, this recipe couldnโ€™t be simpler and easier. I made this recipe with Malibu but since my girl and my brother love it, I made two batches one with and one without. We all win!

For the Malibu version, I waited until I got the consistency I wanted for the coconut limeade and served the kids first, and then added the Malibu to the rest.

It’s not a secret that I’m not a fan of this hot summer weather that we are already having, but letโ€™s face it, it’s perfect to stay cool and have this rink, right? Hence, this post. I think I found my new favorite drink: Frozen Coconut Limeade!

This drink tastes like summer in a glass. Between the sweet coconut, lime pie, and slushy consistency, it will have you feeling like you should be sitting on a beach right now.

But if there are no beach visits in your immediate future, at least you can go to a pool and have this frosty drink that will keep you cool during the warmer months.

We enjoyed it so much. Itโ€™s so absolutely delicious and refreshingโ€ฆ Iโ€™m becoming a bit overly fan of this drink. Iโ€™ve made it several times with and without Malibu and I canโ€™t get enough of it!

Iโ€™m not much of an alcohol drinker but coconut rum is really good as an addition to some drinks. Brings scent and a delicious flavor without getting anybody drunk LOL. Of course, Iโ€™m talking about really small quantities LOL!

How to Make this Coconut Limeade Drink

Ingredients:

  • Coconut milk
  • Lime juice (freshly squeezed)
  • Sugar
  • Malibu liquor
  • Crushed or small ice cubes
  • Cherries, lime slices, and coconut pieces as garnish

Tools:

  • Blender

Directions:

  1. In a blender mix all ingredients (coconut milk, lime juice, sugar, malibu*, and crushed ice) together until you get the desired consistency.
  2. I prefer it with a smooth and thicker consistency as it’s creamier but you can get it more of a crunchier effect by blending for less time.
  3. Garnish your drink with fresh mint leaves, cherries, or a wedge of lime for an added pop of color and flavor.
  4. Serve and enjoy!

Preparation Tips:

  • For an extra creamy texture, pour some coconut milk into ice cube trays and freeze it. These coconut milk ice cubes will keep your drink chilled without watering it down!
  • Swap out regular ice cubes for coconut water ice cubes for an extra burst of coconut flavor.
  • Add a pinch of salt to enhance the sweet and sour balance of the drink.
  • Before pouring your coconut limeade, dip the rim of your glass in a shallow dish of shredded coconut. It adds a fun tropical touch and a delightful crunch with each sip.
  • Want to go all-out tropical? Toss in a splash of pineapple juice along with the limeade and Malibu. It adds a hint of sweetness and takes your soul straight to the beach!

Alternatives and substitutions

You can add or substitute with these ingredients:

  • Use concentrate or frozen lemonade instead of fresh lime juice
  • Use coconut water instead of regular
  • For a non-alcoholic version, skip the Malibu.
  • Add fresh or frozen strawberries or cherries
  • Use any flavor of rum you like instead of Malibu
  • You could use sweetener instead of sugar but I have never tried it before.
