I have to admit, where I live is nowhere to see summer. Here is cold, cloudy and rainy. BUT I can live in my dream that we are in a warm place, and make some delicious and refreshing beverages indoors, right? Like this absolutely and incredibly delicious strawberry Pina Colada that I made a few days ago. Is never too cold for me to dream about summer!

Let’s be honest what do you do when you live in a place where cool is the normal most of the year? Sometimes it gets warmer but is usually colder LOL. Dream about summer and give yourself a bit of summer flavor even if that means drinking something cold. Isn’t that right?

Actually any opportunity we get when the sun comes out and warms up a bit I can’t help the need to make something fresh! This strawberry pina colada is SO super easy to make and it’s SO SO good.

But I must confess, I much rather live in a cold place than in a hot one and if it’s humid, it’s death for me. Literally. I have low pressure so when I deal with hot weather I tend to faint. So I’m so happy living here, and I can handle it and I can definitely have some Strawberry pina Colada every now and then. And when I need warm and beach I just go to a warmer place, enjoy and return home!!!

Am I weird?

Anyway, here is the recipe and hope you enjoy it!

Directions

Mix all ingredients in a blender.

Serve immediately, décor and Enjoy!!!!

* For pineapple juice I used about 3 cups of chopped pineapple, about ½ {maybe a bit more} cup of water and 1 tbsp of sugar. I mixed it all in a blender and then I strained it to remove all the fiber from the pineapple. Since is a bit thick it’s kind of slow the strain process but it goes through.

The reason you want it thick is so your final pina colada is also smooth and thick.

Ingredients

  • *1 cup of pineapple juice {the thicker the better}
  • 1 cup of coconut milk/cream {the same the thicker the better}
  • ½ cup of white rum {I used Malibu}
  • 2 cups of crushed ice
  • ½ pound of Strawberries
  • 3 tbsp condensed milk.
  • Pineapple pieces and Cherries as garnish.

Instructions

  1. Mix all ingredients in a blender.
  2. Serve immediately, décor and Enjoy!!!!
