Broccoli and Dried Tomatoes Macaroni!!!
My mom made this Broccoli and Dried Tomatoes Macaroni recipe to me a long, long time ago and these last few days made me want to make it. I can not remember the exact recipe but I did pretty much what I remembered =D.
Broccoli and Dried Tomatoes Macaroni!!!
It’s super easy, it is usually faster than the pasta itself. It is yummy for those days when suddenly you do not feel like eating any meat.
Ingredients:
- The ingredients are based on approximately 4 serves.
- Pasta of your choice ( I use Macaroni )
- Broccoli ( A regular piece cut into smallish trees )
- Dried tomatoes ( in sachet or in oil, about 6 to 8 pieces)
- One medium onion ( diced )
- 2 cloves of garlic
- 2-3 tablespoons olive oil
- salt
- Dash of pepper mixed
- One tablespoon of Soy
- And Tomatina tomato sauce ( basic tomato sauce slightly concentrated)
Directions:
The first thing I did was put the water in the pot to boil.
Then as I used dehydrated tomatoes (ie that was literally dry) I put in a little boiling water (enough to cover ) to hydrate for a few minutes while cutting broccoli, onion and garlic ( crushed) . Once the tomato is well hydrated I chop it into tiny pieces. Do not throw the water as it contains lots of tomato flavor and will be used later.
In a large pan (Wok is even better) pour the oil over high heat / high heat. Once hot , add the onion and garlic. When the onion is transparent add tomato and mix well with circular motions, I added salt, pepper, soy (and other spices if desired) . Sauté a few minutes and finally I added the broccoli and tomatoes water and about 4-5 spoonfuls of Tomatina {tomato sauce}.
I stirred it for a few more minutes until the broccoli started to intensify its color, turned off the flame and I covered for broccoli finish cooking with the residual heat and steam.
Of course at the same time, I added the pasta and salt to the water. Once ready drain it and added it to the sauce pan and mix all well so the past would absorb the flavours. Leave it about 5 minutes and ready to eat!
