Snickers Bar Chunks Cheesecake

I got so inspired seeing so many great dessert recipes out there that I couldn’t help joining 2 things I LOVE {besides Nutella of course}: Snickers Bars and cheesecake =D.  Adding chunks to it makes so much difference LOL. It’s so yummy!

I really couldn’t find this delicious recipe I saw once long time ago. It was a cheesecake with chunks of Oreo, can you imagine that???. I’m not a huge fan of Oreos {weird right?} but that one looked so delicious!… Then I though, what if I change the Oreos for Snickers? And I answered my self “YUMMMMM” Let’s do it!

I learned the cheesecake recipe from my mom when I was a teen and I hadn’t changed it until now =O Shhhh, don’t tell her! LOL.

Here is the recipe, hope you like it!

Ingredients:

Cheesecake

  • 1 tsp of Vanilla
  • 24 oz of Cream cheese {Room temperature}
  • 1 cup of white sugar
  • 4 Snickers Bar
  • 4 Eggs

Topping

  • 1/2 cup Semisweet chocolate chips
  • 3 tbsp of light cream
  • 1 Snickers Bar

Crust

  • 12 oz of Cashew graham cracker {you can use any kind graham cracker but with honey or nuts are great}
  • 4 oz of melted unsalted butter

Directions:

For the crust. Turn the graham crackers into crombs with a food processor. When the crombs are very small add the melted butter and mix for about 2 min to blend it well.

Butter or spray 9″ springform pan.  Pour the mixture in the pan and press and pat into bottom until it’s even. Bake at 350 ºF degrees 5-10 minutes. Set aside.

Using electric mixer, beat cream cheese, sugar, vanilla and eggs {one at a time}, until fluffy {about 3-5 minutes}. Transfer filling to prepared crust. Make chunks of snickers bars with hands.

Add the chunks al over the mixture.

Bake until cheesecake puffs and edges crack slightly, about 1 1/2 hours. Bring cake to rack and run a small knife around the sides of the cake to loosen. Let it Cool completely.

For the topping, place the chocolate chips, light cream and snicker bar {chunks} in a bowl and melt everything on bain marie {hot water bath}.

When you see it all soft, mix well with a spoon or whisk. It must be a little bit thick.

Pour it on top of the cheesecake unevenly as much as you like. Place snickers chunks all over the cheesecake on top of everything. Cover cake with plastic wrap and chill cake overnight.

Remove sides of pan, serve and enjoy!!!

    what is this cashew graham cracker crust? did you make it or buy it?

    1. Camila

      Hi,
      The crust is homemade like any pie crust. The only difference is that the cracker I used had cashew. You can use any cracker you like, I just happened to find those crackers and used them on my cheesecake but it’s not a must. Any cracker will do. Hope this helps!

    I love cheesecake so will be making this for sure except instead of using Snickers (not really a fan of Snickers) I probably will use something like a Milky Way or Peanut Butter Cups.

    This looks amazing — I may have to make this for my husband for Christmas. He was diagnosed a year ago with Celiac and hasn’t had a decent cheesecake since…I can use “his” cookies to make the crust and then go from there!
