Delicious Chicken Crust Pizza
Hi The Crafting Nook fans, I’m Jamie and I blog over at Bugs and Beans and I’m super excited to be one of the monthly contributors here! Thank you Camila for having me and I’m looking forward to getting to know you all a little more and showing you some of my cooking skills and some-what craft skills in the near future!
Now on to my yummy and most delicious Chicken “Crust” Pizza! One day as I was thinking on what to make for dinner, I thought pizza sounded so good, BUT, I didn’t feel like making fresh dough, or ordering it out. Then I remembered the healthier version of a pizza crust my sister mentioned to me one time. It’s gluten free and it is a whole lot easier than rolling out pizza dough!
Delicious Chicken Crust Pizza
So I thawed out a few breasts of chicken. We have a family of four and I thawed out three chicken breasts. They ended up being giant pieces as I butterflied them. The kids shared a piece and my husband and I both had our own.
This is super filling and that’s all you really want is a piece…so no going back for 3rd’s or even 4th’s…ahem…like I do with normal pizza, hey no judging here! A girl can love her some pizza!
So on to the ingredients and the instructions for this Chicken Crust Pizza!
Ingredients:
- Large chicken breast
- Favorite Pizza Sauce
- Mozzarella Cheese
- Pepperoni
- Olive Oil
- Salt and Pepper to taste
- Basil
Instructions:
While your pan is heating up on medium to high heat take your chicken breasts and butterfly them. Place a piece of saran wrap and lay on top of the chicken. Pound until the chicken is the same thickness throughout. Sprinkle with salt, pepper and basil and lay seasoned side down in your pan. Listen for that sizzle!! Season the remaining side. Cook for 4 minutes, flip and cook for 4 minutes on the other side.
When your chicken is done place on a cooking sheet and finish cooking the rest of your chicken breasts.
Turn on your broiler
Grab your sauce and spread 2 Tbsp on each breast. Sprinkle the mozzarella cheese and top with your favorite toppings.
Broil until the cheese is melted and bubbling.
Enjoy!
