I’m starting to like this cooking thing… uhmmm… well once in a while doesn’t hurt, does it?
LOL… It’s not a secret that I don’t like cooking but sometimes is fun and I kind of enjoy being in the kitchen with my mom, my husband or even my girl. I learned how to make these cornflake chicken tenders a while ago and believe me, more than one person around here loved it!
Cornflake Chicken
It’s crunchier and so so tasty. Tender juicy chicken breasts crusted in our favorite cornflakes and fried to crispy perfection.
I am absolutely crazy about chicken tender strips. It’s one of my very favorite dishes. Needless to say, I love KFC and any similar chicken restaurants.
I was not happy with the regular breaded chicken I was used to making at home and then I saw The Super Crispy Chicken Tenders from Dinner then Dessert and it’s amazing!
Still, even though I loved it, I wanted to try something else, and I found these easy Dorito Chicken Tenders from Spend with Pennies and Oh my goodness! Another heaven!
But then I saw on TV my biggest and most amazing discovery. Using cornflakes to crust the chicken tenders! Holy moly!!!! That was perfection.
How to make cornflake crusted chicken
The process to make these is very simple and not much different from the regular tender strips coated with crumbs. It’s so yummy. I could have them every other day LOL.
Ingredients
- Chicken tenders
- Cornflakes smashed
- Eggs
- All-purpose flour
- Milk
- Garlic powder
- Salt and pepper to taste
Instructions:
- In a plastic bag mix the chicken with 1 tsp of garlic, a bit of salt and pepper. Yes, LOL in a plastic bag! Those to keep food in the fridge do the job =D. Make a light knot and just mix it all. It’s so much easier. Leave it for about 30 min.
- In a medium bowl mix the eggs, light milk, 1 tsp of garlic, some salt, and pepper {again} When is well-mixed dip the chicken.
- I smashed the cornflakes by placing it in a plastic bag and crush it all with my hands. I didn’t use a food processor because I don’t get the uneven crumbs LOL. Then add the flour and mix. Place the mix on a plate.
- Preheat 1 inch of oil in a large skillet or frying pan over medium-high heat. Now one by one, roll the strips in the cornflake crumbs mixture. It’s good to make some pressure with fingers so it sticks better.
- When you have all strips ready, cook in hot oil until golden brown each side. Then remove them from oil and place on a platter lined with absorbent paper towels. Serve with sauce {I used Sweet & Sour sauce} and it goes well with some mashed potatoes.
This cornflake chicken recipe serves four.
What do you think? Yummy isn’t it??? Have you made chicken tenders like this???
serving suggestions:
- Cheesy Potato Cups,
- Turkish Style Couscous, and
- S’mores Sandwich for dessert!

Roll each chicken strip (one at a time) into the crumbly mixture, coating well. Set each coated strip onto the foil-lined pan, leaving a little space between each. Freeze until firm- approximately 2 hours or so. Once frozen, you can store it in a freezer bag for 1 month.
