Summer Apple Salad

Summer Apple Salad {from Contributor Chadra}
Today I have made for you a incredibly easy and incredibly tasty Summer Apple Salad. When it’s this hot outside all I can think about is eating and staying cool. The last thing I want to do is heat up the kitchen with the oven! I know that you are going to love this salad and that you will be making it over and over again.
Filled with fresh crisp Fuji apples, raisins, and pecans! The light and slightly sweet dressing take this salad to the top. You will love the plump raisins in each mouthful. Apples are certainly the star of the show. I like to try to mix up my salad dishes. During the summer it’s very easy to get in a salad rut.
Summer Apple Salad will not leave you feeling unfulfilled. The surprising tang of the buttermilk is perfectly balanced with the sweet of the fruit.
Ingredients
- Fuji apples diced {any apple will work}
- Lemon juice
- Raisins
- Pecans chopped
- Buttermilk
- Light mayo
- Sugar
- Romaine lettuce {optional}
Instructions
- place apples and raisins in a mixing bowl
- add the lemon juice to keep apples from browning
- in a smaller bowl whisk the mayo and buttermilk until smooth and creamy
- mix the sugar into the creamy mixture
- pour over the apples and toss to coat
- gently fold in the pecans
- place in fridge for minimum of 30 min
- Enjoy!
Here are my tips for making Summer Apple Salad: The recipe calls for 2/3 cup buttermilk. There is no need to run to the store. You can turn your 2% milk in 5 min. 1 tbs of white vinegar to 1 cup of milk. 5 min later you have a cup of buttermilk!
You can toast the pecans to deepen the flavor if you choose. Also think about changing the nuts up and use walnuts.

- 1/2 cup pecans chopped
